Potato Rosti w/ Crème Fraiche & Salmon

Rosti : 

2LB potatoes, peeled and grated

1 tbsp melted butter 

Salt n peppa to taste

Toppings :

1/2 cup crème fraiche

3/4 cup flaked salmon

Drizzle of herb oil

Pickled onion

Fresh mint leaves

Squeeze the water out of the potatoes and mix with butter and s&p. place in a non-stick pan with some neutral oil on medium low for 12 minutes on each side. Enjoy with any toppings your heart desires!
