Orange & Mint Chimichurri

1/2 cup olive oil

2 tbsp red wine vinegar 

Zest and juice of 1 orange

1/2 cup finely chopped parsley 

1/4 cup finely chopped mint

3-4 cloves of garlic, minced

1 small red chili or 1 tsp chili flakes 

3/4 tsp dried oregano 

1 tsp sea salt

1/2 tsp black pepper 

Combine all ingredients and allow to sit for 30 minutes and up to 4 hours. Serve with meats, fish, and veggies. Enjoy!
