Japanese BBQ Cauliflower Wings
sauce :
1/2 cup soy sauce
3 tbsp brown sugar
1 tbsp mirin
1 tbsp honey
1 tbsp white miso
1 tsp toasted sesame oil
2 gloves garlic, grated
1 inch piece ginger, grated
1/4 cup water
1 tsp corn starch
Place all the ingredients, except water and corn starch, into a small sauce pot and bring to a boil, whisking frequently until miso is dissolved. Add cornstarch to water and mix until dissolved, then add to the sauce pot. Turn off the heat and let cool.
batter :
1 small or 3/4 large cauliflower, chopped
1 cup all-purpose flour
1 tsp togarashi
1 tsp garlic powder
1 tsp ginger powder
3/4 cup water
s&p to taste
Place all the dry ingredients in a bowl and add water until the desired consistency is reached, runny but thick enough to coat the cauliflower. Fry the cauliflower in the air fryer at 200C for 20 minutes or until crispy. You can also bake these or deep fry them! Toss the cauliflower in the sauce and serve with a side of kewpie mayo :)
